How it works:
Isn’t cooking a lot more enjoyable when you get to cook for somebody or cook with somebody? I love cooking with my husband and I especially love cooking with my girlfriends! It’s just a soulful experience being in the kitchen with the ladies.
Since I love cooking with my girlfriends, I am encouraging all of YOU to start your own Girlfriends in the Kitchen group. We try to cook one dish recipes that you could use with your group or you are more than welcome to create your own recipes to use. Everyone is delegated an ingredient to bring. You all make the dish and then get to take it home to bake later.

Greek Chicken Baked in Yogurt
Serves 4-6
2 TBS olive oil2 medium yellow sliced onions or red onion
4 chicken breasts
4 cups Greek Plain yogurt, strain in cheesecloth for at least 2 hours to thicken
2 eggs slightly beaten
2 garlic cloves, minced
3 TBS flour
2 tsp dried mint
1 tsp cumin
1 T. fresh lemon juice & zest
salt and ground pepper
2 TBS Parmesan cheese
1 bag Spinach
Brown chicken breasts in olive oil. Slice onions & put in casserole dish that has been rubbed with olive oil. Place browned chicken on top of onions. In a mixing bowl, combine yogurt, eggs, garlic, flour, mint, cumin, lemon juice & zest, S & P, Parmesan cheese. Pour yogurt mixture over chicken. Top with a lemon slice. Bake at 350 F for 45 min - 1 hour. Steam or Saute Spinach with a little olive oil. Serve chicken on a bed of the spinach.
