Banana Nut Pancakes, Egg & Sugar Free

These pancakes are great!  They are light & fluffy which is hard to accomplish without eggs.  The almond mash & fresh almond milk give it a nice nutty flavor and the bananas give it the sweet flavor.  You could easily leave out the almond mash & bananas to add your own flavor combo: sweet potato mash, oatmeal, blueberries, chocolate chips, etc...

I think it would also be fun to use this as a batter.  That will be my next weekend breakfast. Pancake battered apple rings!  YUM.





Banana Nut Pancakes, Egg & Sugar Free

1 cup flour ( whichever kind you prefer)
1/3 cup almond mash (see almond milk recipe)
1 teaspoon stevia
2 tablespoons baking powder
1⁄8 teaspoon salt
1 cup almond milk
2 tablespoons vegetable oil
1 banana cut in slices

Directions
Set out all your ingredients.
Set a stove element with a pan to medium heat.
Combine the 4 dry ingredients (flour, stevia, baking powder, salt) in a bowl.
Add the almond milk and vegetable oil to your mixture.
Mix until smooth.
Now the pan should be ready for your batter, so spoon one pancakes' worth of the mixture into the pan and add 3-4 banana slices on top.
Flip [carefully] when you see bubbles in the middle of the pancake, or if the edges are looking stiffened.
Repeat until the batter is gone.  I then served them with Sugar-Free Syrup.  So good and very fluffy for having no eggs!
