I'm not sure about you guys but packed lunches for yourself, your spouse & your kids can be a daunting task. I LOVE to cook, and even I get stumped on what to make especially at 6:30 in the morning. I did a little recipe research to get a list of some yummy, minimally processed, healthy lunch ideas that you can pack for everyone in the house.
When I would look up lunch ideas for kids, the image below are the most common ideas that I would find. This is pretty funny! Like I am going to pack lunches looking like this everyday???? You've got to be kidding.

Most of these lunch ideas you can make pretty fast in the morning or make it for dinner the night before and then just pack it for lunch the next day. Voila! Sometimes I like to just change up last night's dinner for lunches - i.e. roasted chicken, broccoli and beans for dinner will easily turn into an easy soup by adding some chicken broth and whatever else you might want to throw in OR you could boil some pasta and turn it into a pasta dish.
I recommend getting a soup Thermos. It really keeps things hot at lunch time.
Here are the recipes for all of these soup ideas. I highly recommend making them from scratch. They are very easy. Plus, you could just throw the ingredients all in a crockpot before bed and it would be ready in the morning. Canned Soups have SOOOO much sodium in them that it's appalling.
With such a healthy & hearty soup, I would pack some fresh fruit and maybe some cheese & crackers or a peanut butter sandwich with the lighter soups.
Ezra loves it when I pack him a thermos of chicken noodle soup on a rainy or snowy day! I am with you though, those cutsie lunches are way too much work everyday. haha.
ReplyDeleteThe girls really love it when I do soup too! It really is super easy to do. I remember loving to open up my thermos at lunch when I was a kid.
