Buffalo Cauliflower

I have been seeing ideas on pinterest for Buffalo wing alternatives for vegetarians and I have been wanting to try them.  So, the other night I cut up a head of cauliflower and decided to Buffalo it!

Oh man, it is so tasty!

Here's how to do it:
Cut up your cauliflower.  Line a tray with tin foil.  Sprinkle with s & p and some oil.  Roast at 375 F for about 20 minutes.  You want them to be tender but I like them a little crispy on the edges.  Once they are to your liking, take out the tray and toss with some Frank's Buffalo sauce.  Then, pop the tray back into the oven for about 5 minutes.  Serve with your dressing of choice.  I like blue cheese!

*next time, I am going to also cut up a potato in the cauliflower mix.  You could also add any other vegetable that you like.
