Harvest season is here and I have been so busy canning & freezing. My kale is so bountiful this year and I have more than I can use this winter. So, I have been trying to get creative with ways to use my fresh kale.
I sauté it, put it in smoothies, in soups, pastas or chop it up for salads.
Recently, I started making kale chips. They are so delicious and you can eat a huge bunch in one sitting.
Salt & Vinegar Kale Chips
Kale
Olive oil
Sea Salt
malt vinegar
Wash & dry the kale real good. Break it into good bite size pieces. Toss it in a little olive oil, sea salt & malt vinegar. I just drizzled a little of each. Then lay them in a single layer. Bake at 350 F for 7-10 minutes. You need to watch them so they don't burn.
*Also don't store them in a plastic bag. They get soggy. Use a paper bag.
