I found this recipe on Pinterest and was instantly intrigued. A soup with jalapeños was right up my alley! I have never even heard of such a thing. I followed the link and the lady that blogged about it went on and on about how delicious it was. The other crazy thing is that it has no cheese in it. I just assumed it was a beer cheese type of soup with jalapeños in it. But the orange color comes from carrots.
It was just as wonderful and delicious as my fellow blogger had stated. Oh my goodness! It was definitely too spicy for the girls but it had just the right amount of heat for the adults. By roasting the peppers it mellows out the spice plus I removed all the seeds. I highly highly recommend this soup.
