We had the most delicious salad for my birthday dinner last week. It was the perfect little birthday dinner with family. Andy made a pot of lobster & crab bisque that was to die for. I made some sourdough baguettes. We had some baked brie with some roasted garlic and my cherry conserves that I made from my mom's sour cherry tree. We had lots of red wine and this cheery, beautiful salad.
I'm glad that I got a picture of it because the girls immediately started picking off the olives like they were candy.
Winter Green Salad with Blood Oranges, Blue Cheese & Dijon Vinaigrette
Bag mixed baby winter greens
1/4 shaved red onion
2 blood oranges, peeled and sliced
1/3 cup kalamata olives
1/3 cup crumbled blue cheese
1/4 cup sunflower seeds
1/4 cup walnut oil
3 T champagne vinegar
2 t dijon mustard
1 t fresh lime juice
1 T honey
salt & pepper
Place all the salad ingredients in a shallow bowl - greens, onion, oranges, olives, blue cheese and seeds. Then mix dressing ingredients in a bowl - oil, vinegar, mustard, lime juice, honey, salt and pepper. Dress the salad about 5 minutes before serving.
